I’ll like to say welcome to my new readers, and thank you to all who took out the time to read this blog. I hope you all had a very good Easter break. After all the festivities, I’ve devoted tomorrow for a huge cookout. Once every few weeks, I undertake this huge cookouts and I pack all I’ve prepared in meal sized portions in plastic bowls and label. This is so I can have meal options for the coming weeks, which can be easily heated in a microwave. Tonight, I’ll be sourcing my ingredients from my ginormous freezer, and leaving them to defrost overnight. So tomorrow I’ll be making:
Puff Puff – I need sustenance I can munch on for a whole day of cooking, and for the purpose of this blog I’ll be posting my Puff Puff 2.0 recipe
Assorted Meat Stew
and possibly Moi-Moi if I remember to soak the beans first thing in the morning. Otherwise it’ll be Yam and Plantain Porridge
As a rule, I need to have stew, one rice/pasta dish, one dish made with beans/yam, one sauce (to stew doesn’t become boring), one vegetable soup and one sticky soup in the freezer at all times.
So, be on the lookout tomorrow, as I’m going to be posting my recipes with hints and tips.
As, we are winding down our long Easter break, I’m also gong to be discussing what to do with leftovers. One sneak peek into one of meals I’ll be talking about to use for leftovers is Indomie Noodle soup.
