You guys know how much I love my favourite group So You Think You Can Cook right? I can write a Ode to the lovely people on that group. One of my kitchen sisters, Maimuna posted a picture about making Ice cream using one ingredient – frozen bananas, and I thought huh? Google to the rescue. Apparently, it is quite a common thing, as it was all over the internet. I was really intrigued and as luck will have it, I had bananas in the fridge.
I don’t like fruit. I am one of those really weird people that just doesn’t get it. I find them very uninteresting. I know how good they are for you, healthy and all that, but I just can’t seem to get myself to pick up fruit when I go to the supermarket. I always pass them on my way, deliberately thumping my nose, sometimes I don’t even see it. No matter how colourful and well arranged they are, you won’t catch me picking up fruit, when I go grocery shopping. Enter my Mum, who made it a big issue when she was around, gosh you would have thought I was five years old again and she was telling me to sit down and eat fruit. You see, Mummy and I have a long winded history when it gets to eating. We have drawn battle lines in the sand over food. Decades after, we are still at it. I am almost dreading the cycle continuing when I have children. Ola “you don’t eat enough fruit and vegetables. You are lucky you have good genes, you need to take care of yourself more, your diet is really lacking in essential nutrients, oh buy this, it is good for you, buy that. Anytime we went shopping, she pumped the basket full of fruits and veggies, and I just let her, knowing fully well I won’t eat it. Yes, I am stubborn like that. Lol. Mummy’s will always be Mummy’s, no matter how old you get. I gave in finally and eat a bit of fruit. Not as much as she would like, but I had to, to get her off my back. I am sure the corporate guys over at Tesco Clubcard must be wondering why fruit and veggies are suddenly showing up in my shopping basket. Lol.
Thanks to Mummy, I had bananas in the fridge, and I simply sliced them and placed in the freezer. Part of me still doubted if it would work. Pictures are one thing, proof another. It worked, people, it worked. Now, I have found a way to make fruit interesting and I will be eating more of it. What is better than Ice Cream? If your kids don’t like fruit, this is a fun way to get them to eat it. If only my mum knew this when I was growing up, I would be a fruit Ninja by now.
You will need
Frozen bananas – over ripened the better
Groundnut – if you have
Almond extract – optional
1. Slice the bananas into rings and freeze
2. Get out a powerful blender or food processor using the knife blade, add the bananas
turn on the motor and watch as the frozen bananas get pulverised. You will still be wondering if it will work as all you will see for the first few seconds is mashed bananas.
Wait for it, wait for it, the mashed bananas will break down further and turn into the consistency of soft serve ice cream. Incredible, right? Lol.
when you can no longer see mashed bananas, stop and open the food processor. The picture below was my first batch using only a few frozen bananas

and zoom, the motor went off, churning and churning, and churning
3. and………..BOOM, open the food processor and stare at your soft, lovely, whipped ice cream. See how creamy it is?
I took out a big scoop with a spoon just to see
It tasted great, honestly it did. I wanted it to pack more of a punch, so I added roasted groundnuts. You can experiment further by adding peanut butter. Even better, in the spirit of nuts, I added Almond Extract, and that clinched it. Wowzer, in smell, and taste, you will be fooled into thinking it is ice cream. The flavour was AMAZING Just like banana ice cream.
4. Scoop it out and serve immediately, or leave in the freezer for a few minutes to harden.
My healthy delicious goodness. You can go a little naughty and add some alcohol into it. Think Grand Marnier (orange liquor), chocolate liquor, Chambord, Brandy, Rum etc. Or even naughtier and sprinkle on caramel or chocolate sauce. Errrrr, that will defeat the healthy eating purpose. Lol
You can do this with MOST types of fruit, that doesn’t have a high water content i.e. Pineapples, Mangoes, Berries, Agbalumo, Papaya, go to town. As long as it is a fruit that has pulp in it, it will freeze nicely. I don’t know about citrus fruits though, because of the seeds and high water content, but you guys can try it out and get back to me. If you are on a diet, and you are getting bored of juicing and juicing everyday, make it fun by cutting your fruit up and freezing it. The beauty of this is, you can buy fruit in bulk, freeze in portions in different combinations and you have fruity ice cream. What can be better than that. I even found a machine called Yonanas which is a fruity ice cream maker. Check it out http://www.yonanas.com/. If you have a food processor or a very powerful blender, you don’t need to buy one. I am tempted though, eBay to the rescue. Lol. I am on a mission to eating more fruit, and this is THE method to go. Sorry, Ben and Jerrys.
