With storing fresh vegetables like leafy greens, you have two options.
- Store in its natural form i.e with the stalk and leaves whole
- Or you rinse, chop and store in the freezer.
I subscribe to the former, because I find that it retains its freshness and taste better. When you chop any vegetable, you have started the degrading process, which is further accelerated by the cold conditions of the freezer. So, I place whole in freezer bags, sometimes having to bend the stalks a little and then freeze.
Yo may be asking Dunni, how then do you cook with it, do you defrost. NO. I pick the leaves off the stalk frozen, it is much easier as the leaves are firm, then dunk in a bowl of water to rinse any dirt, after which I chop and cook. I have found that it retains its taste, flavour and crunch using this method
