If you’ve always made pancakes and they are getting boring, quick, stock up on oranges, lemon, grand marnier/brandy. I am actually making this for breakfast tomorrow June 23rd 2013, so update your shopping list. Other interesting things to add to your shopping list are varieties of fish – salmon, crocker fish, titus fish, sardines. Also buy yams, plantains and cocoyam.
For Akara or Moi-moi, during the week, this is very doable. Simply peel the beans on a weekend and freeze. Defrost in the fridge overnight or on the kitchen table and you blend, followed by frying (akara) or steam (moi-moi). Dinner or breakfast will be ready in under 30 – 45 minutes.
I chose meat pies for saturday morning breakfast because it is a weekend morning, so treat yourself to freshly baked homemade meat pies. Don’t forget to add flour, mince meat, potatoes and carrots to your shopping list. Mincemeat will also work for thursday’s dinner of meatballs.
If you’ve never tried groundnut soup before, stock up on groundnuts, efinrin (basil) and oziza seeds (substitute with black peppercorns) and enjoy a delicious sunday lunch.
I really hope I have given you lots of delicious ideas for this week. Together, let’s say enough to boring repetitive meals. I know we are all busy, but make all that hard work and studying worth it by eating good food. What better way to fuel your day than a full tummy and satisfied taste buds.
