First, let me take you through how it is done manually, then we can go on to the exciting part. You will appreciate it more when you see how strenuous it is to pound the palm kernel fruit manually.
First you boil the fruits
Until you can peel the skin off the nut easily.
Then you drain off the hot water and pound in a mortar using a pestle to dislodge the skin off the nuts
Until you start to see a lot of mesh around the nuts. This can take you 30minutes
Scoop out the mesh into a bowl
add hot water
Use your hand to dislodge as much of the extract from the mesh
Then sieve into a pot and boil.
What if I told you that you can do the exact same thing in 2 minutes using a food processor
soft enough to pound
add to a food processor bowl with the knife blade attached
see knife blade below
pulse for a few seconds at a time, or let the engine run for a minute
this does an even better job than manual pounding. The skin has been picked off cleanly from the nuts. See the black nuts peeking out? Watch the videos
Part 2: The Extraction. Easy peasy. It shelled the nuts clean. Mortar what? Remember to tag your Efik, Delta, Igbo, Yoruba and other South South friends and family. Repost too. "Dunni please make me an epic surf and turf but Banga this time, not Okro. Yes Ma'am. Going the extra mile using the nuts and not extra t from a can. If you want a bowl or two, please send me an email. Remember, you need to pass through Heathrow, at some point to get a bowl. ?
Still on the matter of healthy cooking oils, making palm oil extract. This food processor brought me a lot of joy and excitement with every new discovery. It brought smiles to my kitchen and even at the dining table. Squeals of excitement and astound meant. It shut up the naysayers too. It launched my food blogging career, blazed the trail for Dooney's Kitchen and inspired so many of you to get one for yourselves. I have so many memories attached to it, I almost don't want to let it go, but I have to. It is going to one of you @amirathemz and just when she needs it too, but before I say goodbye to it, it has to perform one last task. "Pounding" Palm Kernels to extract the juice. This task will take you quite some time using a mortar and pestle. I was done in under 2 minutes. Amira, I hope it brings you as much luck and joy as it brought me. #theNewNigerianCookery #finaldeathtothemortarandpestle. Tag your Delta and South South friends, Banga on Speed dial. Tag your Igbo friends, Ofe Akwu on express way. Tag your Yoruba friends. Obe Eyin pese pese. Repost too. #Kenwood #KenwoodMultiPro #KenwoodFoodProcessor #nigerianfoodblogger.
pour the contents of the food processor bowl into a pot, add hot water
see what i was saying above. The nuts are very clean. Maximum “pounding” with zero stress
Sieve the mesh out
If you were worried about the condition of the knife blade, don’t be. I don’t expect that you will pound banga every day of the week, so your knife blade will still be in tip top shape.
Serrated edges still intact
……and that’s the extract. Same as with the manual process, but less of the arm cardio
